3/4 cup flour
1/2 cup sugar
2 cups oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup applesauce
1/4 cup maple syrup or other liquid sweetener
1/4 cup molasses
1 tablespoon vanilla
1 egg replace (I used Ener-G)
1 - 1 1/2 cups chopped dried apricots
1/2 cup shredded coconut
(approx. 2-3 tbsp) oil
Preheat oven to 350 F. Combine the flour, oats, sugar, baking soda, baking powder, and salt. Mix well.
In a separate bowl, combine the applesauce, syrup, molasses, vanilla, and egg replace. Add a splash of oil (a couple of tablespoons).
Combine the wet and dry ingredients and add the apricots and coconut as well.
Drop spoonfuls onto a greased cookie sheet, flattening them out a bit as you go. Bake 15-20 minutes until firm.
These will not be hard crunchy cookies, but fairly soft and chewy.
