10 cups fresh young spring nettles (picked from the woods, if possible)
4 garlic cloves, chopped
4 tablespoons sesame seeds
1 cup breadcrumbs
salt and pepper, to taste
1/4 cup marinated black olives
3 tablespoons whisked flaxseed oil (or other binding agent)
fresh sage, chopped, to taste (optional, but interesting)
1/2 onion, chopped
oil, as needed
1. Boil the nettles in a small amount of water (just have 2 or 3" in the pot and make sure to have a lid on) for about 10 minutes until tender. Don't throw the liquid away; it makes a very effective detox tea. Squeeze excess water out of the nettles and roughly chop them.
2. Add the rest of the ingredients and stir. Form patties of the size you like; small appetizer size or actual burger size.
3. In all honesty, these taste best deep or shallow-fried. Heat oil in pan, and fry on each side until golden and crispy.
4. For the more health-conscious, you could just use a tiny bit of oil and carefully fry/turn them, or bake them.
