2 tablespoons olive oil
1/2 medium purple onion
3-5 cloves garlic
1 lemon, juiced
1/4 cup water
1 pound greens, chopped (collard, mustard, turnip, spinach)
1/4-1/3 cup mojito sauce (I use Trader Joe's Cuban Mojito Sauce)
salt and pepper, to taste
1. Saute onions and garlic in olive oil.
2. Add juice of the lemon and 1/4 cup water. Add greens and bring to boil.
3. Lower heat to medium low and add mojito sauce. Let simmer for 20 minutes. Season, to taste.
Serve with black beans and cherry tomatoes on the side.
