1/4 cup flour (I like whole wheat)
salt, to taste
pinch baking powder
1/8 pound silken firm tofu
1/4 cup nondairy milk (I use soy)
1 tablespoon lemon juice
1 medium onion, sliced to rings
oil, for frying
1. Mix flour, salt, and baking powder together in a small bowl.
2. Throw the tofu, milk and lemon juice in a blender and blend until all the tofu is blended. Combine wet to dry and stir; you may need to add a bit more milk.
3. Heat oil in a frying pan. Dip each ring into the batter and fry them all till they are golden brown.
4. Drain on paper towels, throw on some salt and serve with a friend or alone (you'll probably wanna gobble them all up yourself, but I shared with my mom!)
