4 cups onions, chopped
3 (8 ounce) packages vegan cream cheese, softened
2 cups grated mozzarella vegan cheese
1/2 cup vegan mayonnaise
1. Preheat oven to 425 degrees F. Lightly grease a 2 quart souffle dish. Combine onions and remaining ingredients in a medium bowl; puree this in a food processor until smooth.
2. Spoon mixture into prepared dish, and bake, uncovered, for 15 to 17 minutes or until golden. This could sometimes take as long as 20-25 minutes, so let it bake until you see it rise.
3. Remove from the oven, let it cool for about 3 minutes (this will help it harden). Serve warm with crackers. You could also add pepper or any herbs to taste.
