Scrambled Tofu

Ingredients: 

300g tofu
1-2 tablespoons of macadamia nut oil
2 tablespoons soy sauce
1 teaspoon Dijon mustard

Directions: 

Mash all the ingredients together. Brown and then stir fry for about 5 minutes. Quick, easy and delicious.
You can also dry fry a handful of pumpkin seeds/sunflower seeds/pine kernels first then add the above ingredients and stir fry everything for 5 minutes
