1 large onion diced
1 medium green pepper diced
3 stalks celery diced
1 lb silken firm tofu cubed
1 large can stewed tomatoes
1 small can tomato sauce
1 container peas (fresh, frozen or canned)
1 teaspoon thyme
cayenne pepper (to taste)
vegetable oil
steamed rice (your preference)
In a very large sauce pan stir fry the tofu in vegetable oil until light golden and set aside. Add more oil if needed and saute onions, peppers and celery until softened (about 10 minutes). Add both cans of tomatoes , peas, spices and return tofu to pot. Let entire mixture simmer uncovered for 30 minutes. Serve over rice. Add tobasco sauce if you like things really spicy.
