1 pound firm tofu
2 bags of frozen stir fry vegetables (16oz)
1 cup uncooked rice (not instant)
1/2 to 2 teaspoon curry powder
1 teaspoon chili powder
3 tablespoons olive oil
Cook rice according to instuctions on package.
Drain the tofu and make sure all the water is out of it. Then cut it up into 1/2 inch cubes.
Lightly oil a skillet with the olive oil. Put in the vegetables and the tofu in the skillet. Then put in the curry and chili powder. Stir it around a bit then cover and let cook for 5 minutes, stirring every so ofton. Then, add the rice in. Stir it around, you may need to add some more oil. Reduce heat, cover and let cook for 5 minutes.
