1 tablespoon roasted garlic oil
1 tablespoon minced fresh ginger
1/2 cup chopped yellow bell pepper
1 cup bagged stir-fry vegetables
1 can black beans, drained
3 tablespoon tamari
3 tablespoon seasoned rice vinegar
2 tablespoon sambal
1 tablespoon brown sugar
2 bags instant brown rice, cooked
Heat oil in a wok over medium heat. Add ginger and saute until fragrant, about 1 minute. Add yellow bell pepper and stir fry vegetables. Cover and saute until slight soft, about 5 minutes. Add the black beans and next 4 ingredients. Stir fry for another few minutes, until vegetables are well seasoned. Serve over brown rice or your favorite rice.
