1 large onion, coarsely chopped
1 cup chopped green pepper
2 cloves garlic, pressed
1 (16 oz.) can stewed tomatoes
2 cup water
1-1/2 lb. tofu, mashed
1T & 1t vegetable bouillon (optional)
2 teaspoon chili powder
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon salt 1 cup rice
Sautee onion, pepper & garlic in a large heavy skillet with a cover in 2-3 T oil. Add & bring to a boil everything else, then stir in rice. Return to a boil, reduce heat & simmer, covered for 20 min. Remove from heat. Let stand for 5 min. before uncovering.
