1 cup dry lentils
1/2 onion
1 stalk of celery
1/2 clove of garlic
1 tablespoon olive oil
2 cups water
2 veggie patties
salt and pepper
hot sauce (optional)
Rinse the lentils to remove any debris. In saucepan, heat oil, and stir in onion, celery, and garlic. Cook until tender. Cook veggie patties until you can crumble. Add patties, water, some salt and pepper, and lentils to saucepan, and bring to boil. Reduce heat and simmer until lentils are tender (about 30 to 45 minutes.) Depending on desired soupiness, you can add more water as it simmers. Right before I eat it, I mash up about half the mixture with a spatula or potato masher. Add a little hot sauce if you want, and some more salt and pepper.
