1 can tomato and rice soup (or a can of tomato soup mixed with 1/2 cup cooked rice)
2 carrots, peeled and sliced
1 onion, diced
1 tablespoon olive oil
pinch of black pepper
pinch of garlic powder
1 tablespoon of an Italian mix, or your choice of dried herbs
1 cup of spinach
2 tablespoon nutrional yeast (optional)
1/4 cup plain soy milk (also optional but it makes the soup kinda creamy!)
On high heat,saute onion in a saucepan with oil for a couple of minutes. Add carrots and continue to cook for 2-3 minutes. Then add pepper, garlic powder and herbs, turn heat to medium, and add soup. I used Campbells condensed as you would normally make it (ya know adding the water). Give it a little stir, then add soy milk and nutritional yeast. Add spinach, and cook until it kinda wilts and the soup is heated through. Stir again and cook till warm..yumyumyum!! Real fast, real filling...adding a new dimension to soup!!
