Spinach Pitas

Ingredients: 

1 whole wheat pocket pita
2 to 4 (or howe'ver many you want) cups spinach
1/2 to 1 teaspoon olive oil
1 tablespoon (or more) salsa
any spices you want (e.g.- red pepper flakes)

Directions: 

Saute the spinach in the olive oil and place in the pita. Spoon salsa into the pita and toast for a few minutes until warm..but not crispy. Add any other flavorings desired. (You can also melt a slice of vegan soy cheese if desired.)
