3 tortillas, choose your flavor
2 cups hummus
1 cup very thick salsa
1 bunch chopped greens (romaine, spinach, arugula, fennel, etc)
olive oil
juice of 1 lemon
Toss greens with a little olive oil, then stir in the juice of lemon.
Stir together hummus and salsa or leave separate.
Place tortilla on plate.
Top with 1/3 hummus, salsa, and greens.
Repeat twice, making a stack.
Garnish with salsa or radishes or olives or. . .
Cut into 4 pieces.
Enjoy! Good sprinkled with sesame salt. Great for potlucks, cut in 12 pieces.
