Grilled Veggie Sandwich

Ingredients: 

1 bunch of spinach
handful of chopped cilantro
1 chopped green onion
1 zuchinni sliced 1/4 thick
1 yellow squash sliced 1/4 thick
1 red bell pepper, sliced
1 loaf of french bread (any bread w/ thick crust will do)
4 slices of Veggie Slices cheese (check ing. I prefer the jalepeno flavor)
1 tomato, sliced to preference
vinegrette to drizzle on the sandwich (raspberry vinegrette works very well)

Directions: 

Heat a pan on med-hi heat and coat with a little oil or Pam.
Sear on one side the zuchinni, yellow squash and red bell pepper. Sprinkle with a little salt and pepper and after about 2-3 minutes turn the veggies over for another 2-3 mins. When done set on a plate.
Take the spinach, cilantro and green onion and toss in the same pan adding a little water if neccessary. When the spinach wilts it is done and set aside.
Slice the vegan bread in 1/2 lengthwise and lay the cheese on first (so it will melt), then the cooked veggies, then the tomatoes. Drizzle a bit of vinegrette, and eat!
