2 whole wheat pitas
1/2 cup of veggie re-fried beans
1/3 cup of salt-free salsa
2 each red and yellow peppers
1 green pepper
1 large sweet onion
large olives, sliced
2 roma tomatoes
non-stick spray, flavored olive oil
1 tablespoon chopped cilrantro
vegatarian sour cream
Cut open half-way the pitas. Mix together the re-fried beans and the salsa. Spread on the pitas. In a non-stick pan, spray and heat. Chop all the veggies, and start frying the onion first. When the onion is almost done put all the peppers in. Fry on medium heat for a few minutes and add the tomatoes and the cilranto. Heat well, and add the pepper and onion and tomatoe mixture to the pitas, add the chopped olives. I add a tablespoon of veggie sour cream.
