Tomato,Basil and Hummus Sandwich

Ingredients: 

2 slices whole grain bread
several slices of the best summer tomato you can find
fresh basil leaves (a few, torn up)
tablespoon of hummus (I love the sun-dried tomato kind)
some fresh ground pepper

Directions: 

Spread the 2 vegan bread slices with the hummus.
Slice the tomato and place on one vegan bread slice.
Spread the torn-up basil over the tomato slices.
Grind some pepper over that.
Cover with the other vegan bread slice.
Eat!
So tasty...so simple!
Note: you can also toast the vegan bread for a little crunch..and/or add some good lettuce.
