12 small unpeeled red potatoes, boiled and thick sliced
12 radishes, sliced
2 bunches green onions, sliced
12 baby carrots, sliced
2 stalks celery, sliced
1 bunch parsley, chopped coarsly
2 jalapeno peppers, minced
2 teaspoon sweet mustard
2 tablespoon soy mayo
2 tablespoon Italian salad dressing
Sugar or sweetner to taste
Pepper to taste
Salt to taste
After potatoes are cooked, and while still warm, toss the potato slices in the Italian dressing. Let stand while you prepare other ingredients. Mix all vegetables together and add to potatoes. Add mustard, mayonaise, vegan sugar and seasonings and toss to mix well.
