2 (16-ounce) cans green beans packed in water, drained
1/4 cup extra virgin olive oil
1 tablespoon granulated sugar
1 (16-ounce) can Italian style diced tomatoes
2 large sweet onions, sliced
1 bulb garlic, crushed, or to taste
1. In a bowl, combine beans, olive oil, and sugar.
2. Layer (repeat layers until you run out of ingredients):Layer 1: Cover the bottom of a large pot with green bean mixture (this ought to use up about 1/3 of the beans, so layer them deeper or shallower, depending on the size of the pot).Layer 2: Layer with an equally deep layer of tomatoes (straight out of the can, liquid & all).Layer 3: Cover the tomato layer with onion slices.Layer 4: Cover the onion layer with a sprinkle of garlic.
3. Cover and cook over low heat until the beans are squishy, 1 to 2 hours.
This is great cause it feeds a bunch of people, you can put it on the stove and ignore it for 2 hours, carnivores won't even notice that there's no meat, and you absolutely can't screw it up! So if you have time, but lack money and expertise, make Greek Green Beans!
