1 (16-ounce) box dry bow-tie macaroni
1 cup chopped assorted sweet bell peppers ( red, orange and yellow)
1/2 to 1 cup cilantro-lime salad dressing, to taste (I use Annie's Natural)
1/2 cup cherry tomatoes
1/3 cup minced cilantro (1 handful)
1/4 cup toasted pine nuts
1 (2.25-ounce) can sliced black olives, drained
pinch cayenne
pinch cumin
salt, to taste
pepper, to taste
1. Cook macaroni according to package directions. Strain, then rinse with cold water.
2. Place macaroni and remaining ingredients in a bowl and toss to evenly combine. Very easy & tasty!
