1 cup dry pasta
1/2 (15-ounce) can black beans or chopped olives
1 cup cubed firm tofu
1/2 cup bell pepper (I use red)
1/2 onion, chopped
1/2 cup Italian dressing
vegetarian parmesan, to taste (optional)
1. Cook noodles according to package directions. Drain, rinse in cold water to cool, then drain again.
2. In a bowl, combine pasta, beans, tofu, bell pepper, and onion.
3. Pour dressing over mixture; toss to coat.
4. Chill. Top sprinkled with vegetarian Parmesan.
