375 g bulgar wheat
300 ml boiling water
1/4 tablespoon extra virgin olive oil
3 tablespoon lemon juice
3 tablespoon chopped fresh coriander
2 tablespoon chopped fresh mint
salt and black pepper
1 yellow and 1 red pepper (grilled, skinned and sliced)
1 bunch of spring onions (chopped)
2 garlic cloves (chopped)
half a cucumber (chopped)
Place bulgar wheat in a large bowL. Add the boiling water and leave to soak for 30 mins., stirring occasionally with a fork until the water has been absorbed.
Whisk together the lemon juice, oil and seasoning. Pour over the bulgar wheat, add the herbs and mix well. Stir in the remaining ingredients. Cover and chill.
Serve garnishe'd with lime wedges and black and/or green olives.
