2-3 pounds of baking sweet potato yam
2 teaspoon of ginger-grounded
1/2 teaspoon of Orange Crust or grated orange peel
1/2 cup of finely chopped pecans
2 teaspoon of vegan soy butter melted/softened
1/2 eggless vegan mayonnaise/salad dressing
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/2 succanut/turbinado sugar/apple butter
The yams are precooked by baking in aluminum foil. Peel and mash. Mix yams with other ingredients-sweetener, ginger and orange in to a 1-1/2 or 2 quart casserole.
Then, mix other ingredients with mixture. Bake for 25 minutes at 350 degrees and sprinkle cinnamon and nutmeg
