1 1/2 tablespoon olive oil
1/2 medium onion
garlic powder
1 cup spinach, chopped
cloves of garlic
1/2 can chickpeas, drained
3 egg substitute
Pour olive oil into skillet, add onion and garlic cloves. Saute for 5 min. Add in spinach and saute for another minute or two. Add chickpeas , stir all ingredients.
Add in beaten egg substitute, and turn heat to low.
You can add additional seasonings like rosemary , oregano and basil.
Let cook on low for about 15 - 20 minutes. Then slide onto a plate and place skillet over plate to flip. Cook on other side for an additional 5 - 10 minutes.
Cut in wedges to serve. Can add some veggie parmeasan cheese if desired.
Note: I also added in some homemade tomato sauce last time, or any additional vegetables would be nice.
