1 medium onion, sliced
1 tablespoon grapeseed oil
1 teaspoon chopped ginger
1 teaspoon curry powder
2 large potatoes, cubed
3 medium carrots, sliced
1 cup green beans, sliced
1/2 bell pepper, sliced
1/2 cup water
1/2 cup coconut milk
1. Fry onion in oil until soft. Add ginger and fry for 30 seconds.
2. Add curry powder, cook for 30 seconds. Add vegetables, coconut milk and water.
3. Simmer covered for 15 minutes. Cook uncovered until vegetables are soft.
Serve with brown rice or dhal.
