1 jar of your favorite pasta sauce (I like Trader Joes 24 oz Vegetariana Ragu sauce, which is a vegan tomato meat sauce)
1 16 oz package dried penne pasta
10 oz frozen chopped spinach (Fresh would also work fine)
4 T vegan cream cheese, or to taste
4 T vegan parmesan alternative
Cook pasta according to package directions. While pasta is cooking, heat the jarred pasta sauce. Drain the cooked pasta, and combine it with the pasta sauce. Remove from the heat, and stir in the cream cheese and the parmesan. Serve and enjoy!! This a very speedy and delicious dish.
