3 cups cooked vegan pasta (use leftovers)
4 cups vegetable broth
1 cup tofu cubed
1/2 canned diced tomatoes
Add vegan pasta to vegetable broth and bring to a boil. Add cubed tofu and tomatoes and cook for 5 minutes.
You could use more vegetables if you wish, subtract the tofu and use up a vegan burger crumbled up or rice. This is about using leftovers or things that may just go bad!
