Caribbean Lunch

Ingredients: 

1 cup frozen broccoli
1/2 cup frozen corn
1/2 cup frozen peas
1/2 cup cooked, drained, and rinsed black beans
1-2 tablespoon shredded coconut
1/8 cup walnuts
1/2 tablespoon extra virgin olive oil
1/2 teaspoon Key West spice blend (salt, sugar, lemon, basil, and thyme)

Directions: 

Place all ingredients in plastic container or zip-loc baggy in the morning. Let marinate till lunchtime. Microwave on high for 2-4 minutes. Enjoy!
