8 large potatoes, scrubbed and diced into big chunks
pack of frozen spinach or equiv. fresh
handful of mushrooms, sliced
2 tomatoes, chopped
1 teaspoon cummin
1 teaspoon red chili powder
half teaspoon tumeric
olive oil
Heat oil and add cummin, tumeric and chili powder. Cook 1 minute.
Add diced potatoes, spinach, mushrooms and tomatoes. Cover and simmer for about 15 or 20 minutes until potatoes are soft.
