1 red Capsicum
1 medium onion
1 packet frozen spinach
2 cloves garlic
2 tablespoons olive oil
1 teaspoon italian herbs
1 375G jar mushroom and tomato pasta sauce
black olives (optional)
1 can peeled tomatoes
1 packet fettacine
grated tofu
Slice onions and mince garlic, saute in olive oil, add sliced capsicum, frozen spinach, peeled tomatoes, herbs, pasta sauce, and black olives. Simmer on low for approximately 15 mins. Cook pasta in boiling water with a little bit of olive oil and salt. Serve with grated tofu on top and a sprinkle of parsley.
This is a quick and very satisfying meal.
