Ginger Mint Fruit Salad

Ingredients: 

2 tablespoons lime juice (1 lime)
1 tablespoon fresh ginger, minced
1 tablespoon fresh mint, minced
1/2 pineapple, chopped
1 large apple, chopped
1 grapefruit, chopped
1 mango, chopped
2 oranges, chopped
2 peaches, chopped
3 kiwis, chopped

Directions: 

1. Dressing: In a small bowl, whisk together lime juice, ginger, and mint. Set aside.
2. Salad: In a bowl, combine remaining ingredients (pineapple, apple, grapefruit, mango, oranges, peaches, and kiwis); toss to combine.
3. Pour dressing over salad; toss to coat.
4. Chill for at least 15 minutes. Toss again before serving. Garnish with mint leaves.
