Filling:
6 cups apples, peeled and thinly sliced
1/3 cup light brown sugar
1/3 cup 100% apple juice (Santa Cruz brand is good)
2-3 tablespoons all-purpose flour
1-2 teaspoons cinnamon Topping:
1 1/2 cups oats (quick or old-fashioned)
3/4 cup light brown sugar
1/3 cup margarine/butter
2-3 tablespoons plain nondairy milk (I use soy)
3 tablespoons all-purpose flour
1. Preheat oven to 350 degrees F. Combine filling ingredients and stir until all the apples are coated. Pour into a 9" glass baking dish.
2. Combine topping ingredients until blended. (You may need to use 1 tablespoon more milk if it's too dry, but it should be crumbly.) Sprinkle evenly on top of apple mixture.
3. Bake for 30-40 minutes or until topping is crispy and apples are tender.
This is very good on its own, but if you want to indulge more, serve with vegan ice cream or whipped cream. Also good with vegan yogurt.
