1/2 olive oil
1 minced garlic clove
1/4 cup fresh lemon or lime juice
1/4 teaspoon salt
1/4 freshly ground pepper
1/4 leaf thyme (dried)
Combine all of the ingredients in a covered container. Shake well. Let stand for about 30 minutes before using.
This dressing is most commonly used on salads, but I like to warm the mixture and dip toasted pieces of pita in for a snack.
