1 avocado
1 tablespoon lemon juice
1 small tomato
1 tablespoon grated onion
1/2 teaspoon salt
1/4 teaspoon chilli powder
3 tablespoon mayo (vegan)
dash paprika
corn or tortilla chips
Mash a soft, ripe avocado in a small bowl. Mix in lemon juice. Chop the tomato and add to the mixture. Blend in the onion, salt, chilli powder & mayo. Sprinkle with paprika and serve with corn or tortilla chip.
Note: If making ahead of time, spread mayo in a layer over the avocado mixture and refrigerate. When ready to serve, blend in mayo. This will help prevent the avocado from discolouring.
