32 oz chopped diced tomatoes in juice
32 oz tomato sauce
1 pound firm tofu (Chinese-style, water squeezed out), crumbled
1 pkg. Just Like Ground (Italian-style, by Lightlife, I think)
1 can mushrooms
1 onion, diced
6-7 cloves garlic, minced
2 bay leaves
Oregano, basil, thyme (1 tablespoon each, adjust to suit)
Tabasco, to taste
Sautee onion and garlic in oil until soft. Dump in a big pot with everything else. Bring to a boil, stirring sometimes, until almost burning. Turn down the heat, cover, and simmer for 1/2 to one hour. Remove bay leaves and serve over any kind of pasta, baked potatoes, on pizza, in lasagna...
