1 onion, finely chopped
4 carrots, finely chopped
3 stalks of celery, finely chopped
1/2 lb mushrooms, sliced
2 cloves garlic, minced
2 tablespoons red cooking wine (optional)
1 tablespoon dried basil
1 tablespoon dried oregano
1 tablespoon sugar
2 large cans tomato sauce
crushed red pepper to taste
salt and pepper to taste
I recommend using a food processor to chop the veggies; it really saves time. Saute chopped veggies and garlic in water or cooking spray until veggies are soft (you can use a little olive oil if you like). Add basil and oregano stir well. Add remaining ingredients and simmer for 1-2 hours.
Put sauce on your favorite pasta. My kids love this recipe--the veggies are so small they can't even tell they are there! For extra protein, add some tofu.
