500 grams Dried Apricots
1 liter Unsweetened Soya Milk
Chop the apricots quite finely. Put them into a bowl with the soya milk in the refridgerator for 48hrs. You can stir occasionally if you like!
The longer you leave it, the thicker the yogurt becomes.
You don't really need a sweetener because it turns out quite sweet naturally, but one idea is to also add a little Cointreau to make things a little more interesting.
It sounds as if it won't work, I know, but if you try it you'll be surprised!
