1 package soft silken tofu
1/2 cup cocoa powder (approx)
maple syrup (only use enough to cut the cocoa bitterness)
1 teaspoon vanilla
2 cups assorted berries (cube strawberries if used)
several sprigs of chocolate mint
vegan thin cookies (like ginger thins or vegan nilla wafers)
vegan chocolate syrup
In a food processor or blender combine tofu, cocoa powder, vegan maple syrup and vanilla. Taste frequently, adjusting to your tastes. I like the mixture to be only slightly sweet to bring out the flavor of the berries. When mixture is fluffy, dump onto pie plate and sprinkle with the berries. Refrigerate for several hours so it gets a little more firm.
Just before you serve, arrange the cookies as you would chips, drizzle with chocolate syrup and garnish with mint. To eat, use a cookie to scoop some tofu goo with berries :)
