1 cup soy margarine (230g)
1 cup packed brown sugar (or equiv. non-sugar sweetener + 1/4 cup molasses) (220g)
1/2 cup sugar (or equivalent non-sugar sweetener) (100g)
2 Ener-G egg substitute eggs
1 teaspoon vanilla (5mL)
1.5 cups flour (190g)
1 teaspoon baking soda (5g)
1 teaspoon cinnamon (5g)
1/2 teaspoon ground cloves (1g)
1/2 teaspoon salt (3g)
3 cups rolled oats (245g)
1 cup raisins (145g)
This began as a non-vegan recipe. I thought that the combination of spices sounded good, so I changed it a bit to make a vegan version. I've been very pleased with the results!
Preheat oven to 350F (175C). Mix up the eggs. Cream wet ingredients together with a whisk or sturdy fork. Add dry ingredients and mix well, mixing in oats and raisins last. Drop by teaspoonfuls onto cookie sheets (the cookie sheets don't knead to be greased first). Bake 9-10 minutes, until a little golden. Be careful not to over bake.
