1/2 cup soy margarine
1/2 cup brown sugar
1/2 cup white sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 egg substitute
1 1/8 cups flour
1/2 teaspoon baking soda
6-8 oz. vegan chocolate chips
1/2 cup walnuts (optional)
Melt margarine over low heat, mix in both sugars, and remove from heat. Mix flour, soda, and salt. Beat egg replacer in a small bowl and add it and vanilla to the margarine mixture. Add this to the flour mixture. Add chocolate chips and nuts if desired. Drop small balls of the dough onto a greased cookie sheet and bake for 10 minutes at 375 degrees.
