1.25 cups white rice
2.5 cups water
1/4 cup Ener-G Egg Replacer (an animal free product)
1 teaspoon vanilla extract
0.5 cup rice syrup
0.5 teaspoon cinnamon
1 tablespoon corn starch
0.25 cup raisins
Get the water boiling and add the rice. While the rice is cooking mix the other ingredients together. After the rice is cooked stir it into the liquid. Pour the entire mixture into a 2 quart baking dish. Place the baking dish into a pan filled with 1 water and bake uncovered at 350 degrees for 1 hour. The pudding should have a custard-like consistency when done.
This dish has only a moderate amount of sweetness. The areas where you bit into a raisin are a bit sweeter.
