1 cup peanut butter
1 cup chopped dates
1 cup pecan or walnut bits
1 cup crunched up granola
1/2 cup maple syrup or rice syrup
1/4 cup rasins
8-10 dried apricots, chopped (or cut up w/ scissors)
1/2 cup tofu milk powder
2-3 cups vegan chocolate
Combine all ingredients but the chocolate in a large bowl and mix together very well. Melt the chocolate in a double boiler and form the dough into approx. 30 balls. Try to avoid sampling, once you start its hard to stop. Roll the balls in the chocolate (with the help of a fork or 2) and place on a cookie sheet covered in wax paper. Let cool in fridge until chocolate coating is hardened. Enjoy!
