1 stick margarine (Willow Run recommended)
1/2 cup plain flour
1 cup unrefined sugar
1/2 cup unsweetened applesauce
1 teaspoon vanilla
1/2 cup chopped walnuts
1/2 to 1 cup vegan chocolate chips (Ghiradelli is good)
1 pie crust, regular size (whole wheat is excellent)
Preheat oven to 375 F. Melt margarine in a sauce pan over medium heat. Add vegan sugar and dissolve. Remove from heat. Stir in flour and applesauce until smooth. Stir in vanilla, walnuts, and chocolate chips. Pour into pie shell. Bake for 10 minutes at 375. Reduce heat to 350 F and bake for 30 - 35 minutes more, until set.
