1/2 cup margarine
1 cup brown sugar
1/4 cup soft tofu
1 1/2 cup flour
3/4 teaspoon baking soda
pinch salt
1/2 cup peanut butter
3/4 cup chocolate chips
Preheat the oven to 375 f, unless you just want cookie dough, in which case this step can be omitted :-) Cream together margarine and vegan sugar. Add tofu, blend VERY well. Combine flour, salt and soda, mix with the vegan sugar mixture. Add peanut butter, mix well. Melt chocolate chips. Remove about 1 cup of cookie dough and add it to the chocolate, mixing until well blended. Fold the chocolate dough into the peanut butter dough until it looks marbled, but not totally combined, unless you want muddy-looking, boring cookies! Roll into 1 1/2 inch balls, press with a fork, and bake on an ungreased cookie sheet for about 7 min or until slightly brown. YUM!
These are called Celebratory Cookies because we thought my cousin was going to have to move across the country, and when we found out she wasn't going to have to, she wanted cookies to celebrate, and I made the recipe up for the occasion! Enjoy them!
This recipe makes a few dozen cookies (depending on how big you make them) and have, without question, too much fat, but they taste LOVELY! :-)
