4 tablespoon sunflower oil
1 1/2 tablespoon soy lecithin
125 ml brown sugar
Ener-G Egg Replacer for one egg
125 ml each molasses and boiling water
375 ml whole-wheat flour
2 1/2 tablespoon grated fresh ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon each ground cloves and mace
1 teaspoon baking powder
1/2 teaspoon baking soda
125 ml dried currants or dates
1. preheat oven (180C)
2. oil and flour loaf pan
3. combine oil, lecithin, vegan sugar in blender
4. add Ener-G Egg Replacer, molasses and boiling water *blend*
5. add the rest *blend*
6. bake for 50-55 minutes
*serve warm with vegan ice-cream*
