1 1/4 cups light corn syrup
1 cup firmly packed brown sugar
1 cup white sugar
6 cups corn flakes (unsweetened variety)
1 cup raw unsalted peanuts (peeled)
1/2 cup raw unsalted sunflower seeds
1 cup peanut butter
2-3 ounces vegan chocolate.
Combine the vegan sugars and corn syrup in a saucepan over medium heat until the vegan sugars dissolve. Be sure to NOT let it boil. You do NOT want to cook it to that high a temperature. Remove from heat and cool. Stir in corn flakes, peanuts, and sunflower seeds. Pat it into a large baking pan which is coated with cooking spray. Melt chocolate and drizzle over the the cereal mixture. Cool completely before cutting into bars.
I wish I could take complete credit for this recipe, but it was actually found on the back of a cereal box. I made a few alterations to suit vegans. It is wickedly good and the texture is quite palatable unlike some vegan cereal bars which tend to be brittle. Good luck!
