1 can drained kidney beans
1 can drained black beans
1 can (14 oz) creamed corn
2 teaspoon garlic powder
1/4 cup salsa (we like Pace - mild)
1 can mixed vegetables (like veg-all)
2 cups prepared mashed potatoes
1/2 cup shredded vegan cheddar-type cheese, if desired
In a cassarole dish, mix the beans, corn, salsa, veggies and garlic powder. Top with mashed potatoes and spinkle with cheese, if using. Bake in oven at 350 degrees about 30 minutes or until hot.
I make this for my vegetarian husband who says it is his favorite food (this and cookies). It is a quick recipe made with things we keep in the house.
