1 tablespoon olive oil
1 clove garlic, chopped
3-4 medium zucchini, cut in match sticks
2 teaspoons chili powder
1 roasted red pepper, cut into match sticks
flour tortillas, to serve
enchilada sauce, to taste
1. Preheat oven to 350 degrees F. Grease a baking dish. Heat olive oil in wok and add garlic and zucchini. Add the chili powder as the zucchini is being stir-fried.
2. Add roasted red pepper, and briefly stir fry (just until the veggies heat through).
3. Roll up in the tortillas, and put in an prepared baking dish and bake for 5 minutes.
4. Pour enchilada sauce over and bake for 5-10 minutes longer. Enjoy.'
