1 onion, diced
olive oil, as needed
1/2 bell pepper, diced
3 tablespoons chile powder
1/4 teaspoon cumin
1/4 teaspoon coriander
1 teaspoon garlic powder
3 tablespoons unbleached white flour
2 1/2-3 cups water
1. Saute the onions in a little oil until almost clear. Add in bell peppers and saute 1 minute more.
2. Begin sprinkling in spices and end with the flour.
3. Slowly pour in water taking care to not make clumps. Bring to a boil then reduce heat and simmer at least 5 minutes. Add water to desired consistency. Voila!
