2-1/3 cup flour
3 tbl. sugar
1 tbl. baking powder
1/2 teaspoon salt
1 cup soy milk or water
1/3 cup oil
1 teaspoon vanilla
2 tbl. soyonaise
2-1/2-3 tbl. cocoa powder
1/2 cup chocolate chips (or more)
Preheat oven to 400*. Grease twelve 2-1/2x1-1/4 muffin-pan cups or use paper liners. In large bowl combine flour, cocoa, vegan sugar, baking powder, and salt. In small bowl, with fork beat milk or water, oil, vanilla and soyonaise until well blended. Add liquid mixture to flour mixture; stir just until flour is evenly moistened. Stir in chocolate chips. Spoon into prepared pan. Bake 18-20 min. until toothpick inserted in centers comes out clean. Remove from pans immediately. Serve warm or cool on wire rack.
